M&Ms Green Coleslaw

That would be M&M as in Mum and Mairi.  A little concoction we came up with.  A sunny evening so we decided to fire up the BBQ.  Eye fillet,  a few sausages, bread and salad...one of life's simple pleasures.

We also felt like a little coleslaw but we had no carrots, however we had been watching Annabel Langbein's new TV show The Free Range Cook and she had done a simple coleslaw sans carrots.  If it is good enough for Annabel it is most definitely good enough for us.

I would relay the recipe but Borders all sold out of her new book The Free Range Cook.  We couldn't exactly remember how Annabel put hers together so we came up with our own with what we had.  Shredded cabbage, alfalfa sprouts, spring onion, herbs and a creamy garlicky mustard dressing, and very successful it was too.  This salad definitely benefits from being made ahead allowing the flavours to blend and meld.  We had some the following day and it tasted even better than the previous night.  So do make it a few hours ahead for the best results.

M&Ms Green Coleslaw

Ingredients
Serves 6-8




1/2 green cabbage shredded
1/2 cup alfalfa sprouts
2 spring onion, thinly sliced
1 garlic clove, crushed
Bunch of herbs: chives, parsley and mint, finely chopped - or any mix of what you have and what you like.

For the dressing
2-3 tbsp mayonnaise
2-3 tbsp sour cream or creme fraiche
1 tbsp wholegrain mustard, a little more if you like
Salt and pepper

Directions

Mix all the vegetables and herbs in a bowl.  For the dressing mix all the ingredients together and gently toss through the salad.  For the best flavour refrigerate for an hour or so before serving.  Simple and delicious.
